MEXICAN HOME COOKING
Mexican cooking can be quite a challenge for the average person attempting to recreate local taste and authenticity in their own home. The largest problem faced by anyone wishing to try out the preparation of Mexican cuisine is in finding the right tools and ingredients.
Number one on the list of requirements just has to be
chilli peppers. Many large supermarket
chains now stock a wide variety of chillies, and therefore
there should be no problems in obtaining suitable chilli’s
for most Mexican dishes. One problem ingredient could be
Masa, which is a dough made by mixing
ground corn kernels with water and often a little ground up
limestone. Masa is used to make Tortillas,
or stuffed with meats and spices to form
Tamale.
We have several unique cooking tools that form part of the
shaping of Mexican food. Firstly we have
the Molcajete; this is mortar that is
primarily used to crush and grind chillis for
making salsa. Then we have the
Comal, whish is a flat, round and often
quite large, iron skillet; its primary use is in
making tortillas and blistering
chillies. Finally we have the Tortilla
Press; this particular device is used to take a
ball of masa and flatten it into thin
round sheets. The thin round sheets are then cooked on a
Comal, with the end result being a Tortilla.

utensils all you have to do is find a suitable
Mexican recipe and create!
